Chicken Parmigiana: Italy

s are known around the world for their pasta and pizza, but chicken parmigiana is also well known although not mentioned as much. This dish is very well known to Italian families and their culture because this dish is named after the Italian region of Parma, where it is said the dish originates. Every Italian family loves their Nonna’s chicken parmigiana whenever it’s made. It can be made for the ‘Sunday Lunch’ at Nonna’s house, or for any event throughout the year. It’s a very simple dish to prepare and it’s delicious. This dish is usually served with pasta or a salad with some fresh bread. Some families serve it after the pasta, like my family does, but it’s different within every family. I chose this recipe to represent my Italian culture because it’s a dish that is less time consuming to prepare than some other dishes and also enjoyed by my family and with that it has some significance. With the little time to prepare the dish it gives my family more time to be with each other. My family is very big like every other Italian family is

and to Italians family is everything. My Nonna loves to cook and wants the family together, again likewise with every other Italian family and nonna’. They go all out to prepare our favourites dishes that take almost all day to make, so we just ask her to make chicken parmigiana with some pasta. I hope you enjoy this dish has much as my family and I do. One last thing, Mangia Bene = Eat well.

THE RECIPE

·         Ingredients: serving 3 people
§  3 whole chicken breasts
§  2 eggs, lightly beaten
§  1 teaspoon salt
§  1/4 teaspoon pepper
§  3/4 cup fine dry bread crumbs
§  1/2 cup vegetable oil
§  2 cups tomato sauce
§  1/4 teaspoon basil
§  1/4 teaspoon garlic powder
§  1 tablespoon butter
§  1/2 cup grated Parmesan cheese
§  8 ounces mozzarella cheese, sliced and cut into triangles
·         Procedure
1.      Pound chicken lightly until 1/4-inch thick. Combine egg, salt and pepper. Dip      chicken breast in egg mixture and roll in bread crumbs. (In a skillet), heat oil until hot. Brown chicken on both sides. Remove (chicken) to shallow baking dish.
2.      Pour off excess oil. Stir tomato sauce, basil and garlic in frying pan. Bring to a boil. Simmer 10 minutes.
3.      Stir in margarine. Pour sauce over chicken. Sprinkle Parmesan cheese over sauce; cover dish and bake at 350 degrees for 30 minutes. Uncover dish, add mozzarella (cheese slices) on chicken and bake for 10 minutes or until cheese is melted.
